Welcome to Green Spiral Herbs. Dan and Betty Pillsbury invite you to explore our site and herb gardens (which are a United Plant Savers' certified Botanical Sanctuary). We also craft herbal products with our garden's bounty. Our exceptional products are created with love and healing intent by knowledgeable hands. You can buy many of our products on-line or at any of the herbal events we attend or at local stores as listed on the links page.

Starting May 16, we will be open on Saturdays, 10-2. If you can't make it then, call and we can arrange a time for you to stop by.

Also NEW!! Green Spiral Herbs Fresh Culinary CSA and Herbal Products CSA.

The Culinary Fresh Herb CSA will feature familiar and unusual herbs and edible flowers for your delight and use, along with some recipes. The Fresh Herb CSA will run from June 27-Aug 29 with weekly Saturday pickups of vibrant, tasty, naturally-grown herbs. In addition to standard culinary herbs such as sage, thyme and parsley, you can look forward to lovage, chocolate mint, lavender, French tarragon, chamomile and much more. Contrast the meager amount of fresh herb you get for $2.99 at supermarkets (which have been shipped from California and have sat for many days) with locally grown, fresh herbs from Green Spiral Herbs. As always in as with any CSA, Mother Nature has the final say on which herbs grow well each year and of the abundance of harvest. Cost is $200 for the 10 week season. Due April 15.

The Herbal Products CSA will feature our very popular hand-made herbal products. This will be a monthly pickup. In May you will receive peppermint tea, Lessen Stress tincture, Lavender spray, arnica oil and a lip balm. June: Peaceful Easy Feeling Tea, Chronic Pain Tincture, Quit Bugging Me, Healing Comfort Salve and lip balm. July: Gentle Soother Tea, Happy Heart tincture, Soothe That Itch, Lavender salve and lip balm. August: Everyday Tonic Tea, Night Night tincture, Relaxing Nights spray, St. John's oil and lip balm. September: Sweet Dreams Tea, Echinacea tincture, Sunny Days spray, Calendula oil and lip balm. October: Elderberry Syrup, Fire Cider Vinegar, Open Sinuses, Healing Vapors Chest Rub, Horehound drops and Healing Flowers Ear Oil. Cost is $240. Due April 15.

Green Spiral Herbs is a family-owned, 5 acre educational herb farm in the northern Catskill Mountains of New York state. The expansive gardens are home to an abundance of medicinal, culinary and magical herbs. You will find common and unusual herbs and a surprise or two. Come to the gardens for a workshop or take one of our medicinal weed walks. Or, immerse yourself in the Herbal Study Program. Please see the education link for more information. Due to popular request, we are now scheduling guided garden tours to groups of 10 or more. Cost is $10 each and includes a complimentary cup of tea and cookies. Betty leads the 1 1/2 hour tour of the extensive herb gardens. She will discuss as many plants and their uses as time allows!
